Empanadas & the Pioneer Woman

To celebrate SHABBAT, Trish & I decided to make empanadas together.
A very successful culinary endeavor! One of the best & tastiest things we've made thus far... also, we were really hungry (the empanadas took what seemed like an eternity to cook; in reality, it was around 15 minutes).
While T cooked all the innards of the empanada (potatoes, onions, corn, canned tomatoes with habaneros, leftover mixed veggies, ground beef, goat cheese with some cumin, Worcestershire, S&P), I whipped up some pumpkin muffins (Continental Divide combination style), from the Pioneer Woman's cookbook. We wrapped the empanadas in puff pastry and nom-nomed furiously when they came out with a cilantro-green salsa-sour cream sauce.





We sure do give Continental Divide a run for their money, mhmm.


Speaking of Pioneer Woman. OMG, her love story is heart melting. Please go read it if you have time- it's long, but so beautiful. Start from the bottom. Her "Marlboro Man" is so very manly and lovely, teehee.

We had three empanadas left over, of which I gave to 3 of my favorite people ;)
Leftover innards & a few pumpkin muffins left for me to consume tomorrow! :)

I've missed you. Haha.
But on your post - I so admire your culinary skills! As well as those of Trish. But combined! Ohmy! Haha. :P
Also, you take wonderful pictures. (Is it just me or is everyone here at UVA/GCF freaking awesome at everything? They THINK about doing something, and they're automatically good at it. Awesome. And by everyone, I exclude myself. That's kay, I like to pretend I have a lot of latent/hidden talents waiting to bloom later HAHA.)


And, when I have more time/less frazzle, I plan to read about this .. Marlboro Man? Pioneer Woman? Well, their story. (Semi-relevant - I have a Marlboro bag. Hehe.)


Last note - I find the "Choose an identity" hilarious. Just the idea of actually "choosing" an identity. Lol I don't know. It's late, I'm tired, makes for one fruity loop.
